  Dill Pickles   - From Emma Schoch
Categories: Pickles, Marinades, Veggies

Ingredients:

  • cucumbers
  • 4 quarts water
  • 1-1/2 cups vinegar
  • 1/2 to 3/4 cup salt
  • 4 Tablespoons sugar
  • pinch of alum
  • clove of garlic
  • pickling spice
  • dill
  • Directions:

    Boil mixture 10 minutes, pour over pickles and steam at 250° until pickles turn a little yellow.


















      Cranberry Salad Ring   - From Emma Schoch

    Ingredients:

  • 1 can (9 oz.) crushed pineapple
  • 1 cup diced celery
  • 1 cup whole cranberry sauce
  • 1/2 cup nuts
  • 2 tablespoons real lemon juice
  • 1 cup hot water
  • dash of salt
  • 1 pkg. strawberry jello
  • 1 packet unflavored gelatin
  • Directions:

    1. Drain pineapple and set aside (save juice).
    2. Disolve jello and gelatin in hot water.
    3. Add pineapple juice, lemon juice, & salt to jello. Chill until partially set.
    4. Add pineapple, celery, nuts, and cranberrys to partially chilled jello.
    5. Chill.














      Sour Cream Raisin Pie   - From Emma Schoch

    Ingredients:

  • 2 1/4 cups milk
  • 3/4 cup brown sugar
  • 4 tablespoons corn starch
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 tablespoon butter
  • 1/2 cup raisins
  • Directions:

    1. Scald 2 cups milk
    2. In a separate bowl, mix sugar with cornstarch, moisten with 1/4 cup milk
    3. Add egg yolks to mixture and blend into hot milk
    4. Stir constantly until smooth
    5. Add Raisins and beat well
    6. Remove from heat and add vanilla
    7. Pour into pie shell













      Butterscotch Pie   - From Emma Schoch

    Ingredients:

  • 1 egg yolk
  • 1 cup milk
  • 4 tablespoons milk
  • 1 tablespoon flour
  • 1 cup brown sugar
  • 1 tablespoon butter
  • 1 teaspoon vanilla
  • Directions:

    1. In pan, mix egg yolk, 1 cup milk, and flour - cook slowly
    2. To above, add 4 tablespoons milk, brown sugar, butter
    3. Cook until mixture is thick - remove from heat
    4. Add vanilla - pour into shell

      Strudel   - From Emma Schoch
    Categories:Dessert: Strudel

    Ingredients:

  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1/3 cup warm water
  • 1 egg - slightly beaten
  • 1 tablespoon oil
  • filling of your choice (apples, pumpkin, etc,)
  • cinnamon-sugar mixture
  • melted butter
  • Directions:

    1. In a large mixing bowl, mix flour, salt, & egg.
    2. Add the warm water & oil.
    3. Knead dough until smooth (the longer you work the dough the better).
    4. Flatten and brush with oil.
    5. Cover with a warm towel for 1/2 hour or longer.
    6. On a covered table (tablecloth or sheet), "pull" dough until very thin.
    7. Sprinkle filling of choice (apples, pumpkin, etc.), over dough.(see photo)
    8. Sprinkle with cinnamon/sugar mixture.
    9. Drizzle butter over top.
    10. Grab one end of tablecloth (or sheet) and lift to "roll" the dough.(see photo)
    11. Bake at 400° for 1/2 hour
    12. Reduce oven to 350° and bake 1/2 hour more.
    13. Remove from oven and cut to desired sized "chunks".
