  Sweet Potatoes   - Beasy McGlothlin

Ingredients:

  • 5 large sweet potatoes
  • 1/2 cup butter (softened)
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 2 eggs (beaten)
  • 1 tsp. vanilla
  • 1/3 cup milk
  • 1/2 cup cream
  • 1 cup pecans
  • 1 cup brown sugar
  • 1 package marshmallows


  • Directions:

    1. Boil, peel and mash sweet potatoes.
    2. Mix together 1/2 cup softened butter, sugar, eggs, vanilla, and milk.
    3. Combine mixture with sweet potatoes.
    4. Simmer cream, add brown sugar and stir until dissolved
    5. Cook cream mixture until it reaches the "soft ball" stage, remove from heat.
    6. To cream mixture, beat in melted butter and pecans.
    7. Pour mixture over sweet potatoes.
    8. Bake uncovered in 350° oven for about 45 minutes.
    9. Top with marshmallows and return to oven for a few minutes to brown.











      Swiss Chicken   - Beasy McGlothlin
    Categories: Main Course

    Ingredients:

  • 8 Boneless, Skinless, Chicken breasts
  • 8 slices Swiss Cheese
  • Cream of Chicken Soup (1 can per 8 pieces of chicken)
  • Crumbled Seasoned Peppridge Farm Stuffing Mix (about 1/2 bag)
  • 3/4 cup butter
  • PAM spray cooking oil




  • Directions:

    1. Spray cooking dish with PAM.
    2. Place chicken breasts in cooking dish and place a slice of Swiss cheese on each breast.
    3. Pour undiluted soup over chicken.
    4. Sprinkle stuffing mix over chicken breasts.
    5. Drizzle melted butter over the top.
    6. Bake uncovered for 2 hours in 250 to 300 degree oven.











      Romaine lettuce salad   - Beasy McGlothlin

    Salad Ingredients:

  • 1 head romaine lettuce
  • 4 oz. (or 1 cup) Swiss Cheese cubes
  • 1 cup cashews
  • 1 cup strawberries
  • 1/4 cup sweetened dried cranberries
  • 1 cup apples (cubed)

  •    

    Dressing Ingredients:

  • 1/2 cup sugar
  • 1/3 cup lemon juice
  • 2 tsp finely chopped onion
  • 1/2 tsp Dijon mustard
  • 1/2 tsp salt
  • 2/3 cup vegetable oil
  • 1 Tablespoon poppy seeds




  • Directions:

    1. Place salad ingredients in a large salad bowl.
    2. Blend dressing ingredients.
    3. Pour dressing over salad and toss.
