Ingredients:
5 large sweet potatoes
1/2 cup butter (softened)
1/3 cup melted butter
1/2 cup sugar
2 eggs (beaten)
1 tsp. vanilla
1/3 cup milk
1/2 cup cream
1 cup pecans
1 cup brown sugar
1 package marshmallows
Directions:
1. Boil, peel and mash sweet potatoes.
2. Mix together 1/2 cup softened butter, sugar, eggs, vanilla, and milk.
3. Combine mixture with sweet potatoes.
4. Simmer cream, add brown sugar and stir until dissolved
5. Cook cream mixture until it reaches the "soft ball" stage, remove from heat.
6. To cream mixture, beat in melted butter and pecans.
7. Pour mixture over sweet potatoes.
8. Bake uncovered in 350° oven for about 45 minutes.
9. Top with marshmallows and return to oven for a few minutes to brown.
